What is the recipe for a lemon meringue

James Martin's Lemon Meringues: crush 4 lemon biscuits & mix in 2tbsp of honey. Whisk 200ml (7floz) of double cream until thick. Stir in 200g (7oz) of cream cheese, 2tbsp icing sugar & 2tsp lemon curd. Press biscuit mixture into the bottom of a tin, & spread the cream mixture on top with a palette knife. Put 1 egg white in a bowl & whisk to form soft peaks. Add 55g (2oz) sugar & whisk again to form stiff peaks. Spoon onto biscuit/cream mix & grill
